This cassoulet is made of chicken thighs braised in a house made chicken stock with tomatoes, carrots, onion, and garlic; seasoned with marsala, basil, thyme and parsley. The chicken is also braised with diced acorn squash, bacon, sausage and great northern beans. It is pretty amazing, the tender chicken, beans, squash, and slight smokiness from the bacon and sausage. You may need a slice a bread to dunk into the cassoulet. We paired a romaine and bibb lettuce salad with the cassoulet. The salad has sliced mushrooms and gouda cheese; topped with sherry marsala vinaigrette. This meal will not only impress yourself, but your friends too. Order a couple to have a fantastic night in.
