This meatless tomato and bean stew is actually quite filling and totally delicious. The base of this stew is made up of sauteed onions, garlic, and cherry tomatoes. Once the onions are golden, this mixture is then seasoned with thyme, red pepper flakes, and lemon zest; then vegetable stock is added. Lastly the white beans are added and the stew is ready to go. Serve each bowl piping hot, garnish with parsley and the cheesy fontina toast. A delightful Italian-inspired meal to savor any day of the week.
