We love it when we have brunch items on the menu such as this delectable frittata. In a sauté pan sliced red bell peppers and scallions are sautéed with dried oregano until just wilted. Next whisked eggs are added and chunks of goat cheese are dropped in the frittata base; it then goes in the oven to bake. Once golden brown and cooked through the frittata is sliced and ready to be served warm or at room temperature. The creamy goat cheese is a pleasant surprise with each bite. A bowl of garden vegetable soup comes with the frittata; that is made up of corn, carrots, potatoes, leeks, green beans, and tomatoes all simmered in a vegetable broth. What an amazing meatless brunch pairing!
