All of the usual suspects in this Moroccan tagine except for the chicken or lamb. Here we celebrate a fantastic meatless tagine, it has diced sweet potatoes and butternut squash, plus onions, garlic, garbanzo beans and tomatoes. All simmered in a vegetable stock seasoned with toasted cumin, cinnamon and saffron. A generous portion of steamed couscous comes with the tagine, plus a salad. We paired a roasted eggplant and fresh tomato salad with parsely and mint; all dressed in a bright lemon vinaigrette with the entree. Together they make a super aromatic meal for a meatless Monday or any other day of the week.
