Traditionally pastitsio is a Greek dish, but we have given it a Moroccan twist to it. We use ground lamb and sauté it with onions, garlic, and tomatoes. The lamb ragu is seasoned with ras-el-hanout, cumin, cinnamon, and mint. Next we make a feta béchamel sauce that also goes into the pastitsio. The dish is comprised of layers pasta, lamb ragu, and feta béchamel. Yum! The pastitsio is baked until golden brown and gooey. We paired it with a side of roasted carrot and avocado salad tossed in a fresh grapefruit vinaigrette. The salad helps balance out the richness in the pastitsio making it a nearly perfect meal for lunch or dinner.
