Take note that this is a very hearty meatless entrée and super flavorful. Our Moroccan-style stew is made up of carrots, butternut squash, onions, and tomatoes, then the stew is seasoned with paprika, coriander, ginger, and turmeric. This stew sits a top of a bed of quinoa with onions, more carrot, turmeric, cilantro and fresh mint. Just in case you want more or need a some lunch we added a baby spinach salad with a Mediterranean vinaigrette. A tender bed of baby spinach is garnished with dried cranberries, golden raisins, crouton, and smoked cheddar cheese topped with a creamy yogurt honey dressing. That dressing has hints of honey, cranberry juice, red pepper flakes, cumin, coriander, olive oil and greek yogurt.
This meal is ready to warm, assemble and enjoy.
