Combo meals are the best. Here we have a pasta salad paired with a cup of soup. Yum. The pasta salad is made up of shaved roast beef and el dente pasta combined with arugula, radicchio and capers. This salad is then dressed with a light balsamic vinaigrette and garnished with parmesan cheese. The pasta adds a but of heartiness to the salad, but we defiantly love the roast beef. It comes with a serving of our roasted pear and butternut squash soup. This pureed soup is made up of pears, leeks, garlic, tomatoes and butternut squash being roasted and then added to simmer in vegetable stock. Once the vegetables and the pears are tender the soup is pureed and then garnished with blue cheese. Yum. What a meal to savor at work or at home.
