Change up your pasta game with this marinated tomato sauce. Yes, we have a “cold” sauce for you to twirl your pasta in. Heirloom tomatoes are marinated in a red wine vinaigrette seasoned with shallots, oregano, basil and red chili flakes; and this becomes the sauce for your el dente pasta. Once your pasta is cooked, toss it in with the marinated tomatoes and top with the chopped marcona almonds. Yum. Each bite is fresh, tangy, pasta-forward and nutty. We paired this summer-inspired entrée with roasted cauliflower and broccoli that is dressed in a salsa verde. Our salsa verde is made up of chopped shallots, fresh parsley, lemon juice and olive oil. Wow! There is so many fresh elements in this entrée we don’t know what to do, but devour it.
