Pasta Bolognese with Mixed Greens with Goat Cheese, Pancetta, Dried Cherries and Pine Nuts with a Port-Cabernet Vinaigrette

We make one delicious Bolognese, no kidding we really do. Our Bolognese sauce starts out with diced onion, carrot and celery being sautéed with minced pancetta until all is golden. Next we add ground beef, veal and pork, plus minced garlic and thyme. Once the ground meats are browned the pan is deglazed with white wine and chicken stock, then the tomatoes are added. The Bolognese is slowly cooked, allowing the flavors to meld. Once the sauce is done simmering it is finished with a hint of cream for richness. Serve the Bolognese atop a bed of el dente pasta and enjoy. We paired the pasta with a mixed greens salad garnished with goat cheese, diced pancetta, dried cherries, pine nuts and dressed with a port-cabernet vinaigrette.
