Get your fork ready for this cheesy meatless moussaka meal. We have taken a classic Greek entrée and modernized it by substituting out the beef and lamb with mushrooms and zucchini. One layer of the moussaka is made up of fresh sliced cremini mushrooms sautéed with onions and garlic; then deglazed with white wine and soy sauce. Another layer is comprised of sautéed diced zucchini. A fresh tomato sauce brings it all together. Once assembled the moussaka has an egg and feta cheese custard poured over the layers of noodles, topped with shredded provolone cheese, and bake until golden brown. The egg feta custard brings the moussaka together. This is one amazing comfort food dish to dig into tonight. As if you needed more food, we paired the moussaka with a lentil salad. The lentil salad has tender cooked lentils, diced fresh tomatoes, minced garlic, scallions, dill and basil; all dressed in a red wine vinaigrette. Split the two items up for lunch and dinner.
