Yes, it is true, these meatball have no “meat” in them. The best part is that you wont even notice. These meatless eggplant “meatballs” are made up of roasted eggplant, diced porcini mushrooms, bread crumbs, romano cheese, parsley, basil and eggs. Once formed they are pan fired until golden brown then served with el dente pasta and a simple tomato sauce. The eggplant and the porcini make you believe you are noshing on a typical meatball, but you know only veggies are in there. To make this meatless meal more amazing and Italian we paired it with the chopped Italian salad. The salad has chopped romaine and iceberg lettuce along with radicchio, celery, tomato, green olive, pepperoncini and shaved parmesan; all dressed in a creamy garlic red wine vinaigrette. What a vegetarian duo!
