Start your meal with our quinoa and black rice salad made up of tender black rice, quinoa, cumin sautéed onion, chopped cilantro and parsley. The salad is then tossed in a lemon vinaigrette and garnished with diced avocado. The grain salad is accompanied by a helping of our mushroom and spinach soup. This aromatic soup is made with sautéed sliced creminis, shallots, and tomatoes that are seasoned with thyme, cumin, coriander, cinnamon and allspice. Once the shallots and mushrooms are wilted vegetable stock is added and the soup comes to a simmer. Next spinach is added and the soup is pureed. Serve the soup hot and add a dollop of yogurt for richness. These two meatless items will get you through the mid-week blues.
