Change up your typical pasta night with a Cajun influenced meal. Instead of the typical Italian style ragu, we made a Cajun style sauce to top your pasta. Tender pieces of chicken are sautéed with sliced green and yellow bell peppers, onions, garlic, and celery; then this simmers in a tomato chicken stock base until the chicken is fork tender. The sauce is seasoned with white wine, paprika, cayenne, oregano, thyme, red pepper flakes and a touch of cream; so it has a nice Cajun flavor to it. Serve the Cajun ragu atop the pasta for one amazing meal that will make you think you are dining on Bourbon Street.
