Bean Bolognese over Zucchini Noodles with Creamy Tomato Soup with Toasted Almonds

Your answer to “meatless Monday” is here. Our Italian-inspired bean bolognese served over zucchini “noodles” will fit that bill. Like a typical bolognese base it starts out with sautéed carrots, onions, celery and garlic; then it is deglazed with white wine and tomatoes are added. Instead of beef, lamb or pork, we use black beans and kidney beans. It still feels very meaty even though it is only vegetables. To make this a more carb conscious dish we swapped out a typical pasta and added portion of sautéed zucchini “noodles”. Yes, you can still top with extra parmesan cheese. This pasta dinner comes with a serving of our creamy tomato soup. Dining vegetarian has never been so easy and delicious.
