Dreaming of a Mexican vacation? Well we are! We were inspired by the beaches of the Yucatan when this poached shrimp salad came to be. A bed of arugula holds sliced avocado, cherry tomatoes, tender hominy, cilantro and cotija cheese; plus the poached gulf shrimp. The salad is lightly dressed in a lime orange vinaigrette, seasoned with garlic, shallots, cumin, cayenne and honey. Totally beachy! Just to keep you warm we paired the salad with our black bean soup. Made with homemade chicken stock, black beans, onions, garlic, carrots, and celery; then seasoned with toasted cumin, oregano and cayenne pepper. The beans are simmered in this soup until tender then lightly pureed and topped with bacon. A combo you can enjoy any day of the week.

This meal is ready to warm, assemble and enjoy.
