Shrimp and Feta-Stuffed Zucchini with Garden Minestrone

Celebrate the summer with a fresh, zesty, and delicious shrimp and feta stuffed zucchini. The zucchini are sliced in half and scooped out to make room for the filling that is made up of chopped onions, diced red bell pepper, fennel, zucchini, garlic and tomatoes. This veggie medley is then seasoned with red pepper flakes before the shrimp, dill, parsley and feta cheese are folded in. Next the zucchini boats are filled with the shrimp and veggie mixture and broiled. We paired the shrimp and feta zucchini  with a bowl of garden minestrone. Each spoonful of this Italian-inspired soup you will discover green beans, diced zucchini, celery, cannellini beans, spinach, tender pasta and torn basil all simmered in a homemade vegetable stock seasoned with garlic, thyme and parmesan. Enjoy both for dinner, or split the two up for two light meals or snack. So many options.
