Short Ribs with Miso Collard Greens

Here is a twist on a classic southern comfort food. The short ribs are slowly braised until fork tender in a sauce made up of onion, carrots, celery, red wine, and stock. Like any short ribs, they are just so meaty and delicious. The short ribs are served along side a helping of our tender collard greens, that have an Asian twist to them. First the collards are sauteed with diced bacon and onions; then seasoned with sherry vinegar and red pepper flakes. The collards are cooked with chicken stock until tender and lastly seasoned with maple syrup and miso paste. Yes, you get a hint of sweet, heat, and that umami savoriness from the addition of miso. Together these two make for one amazing meal to savor at home or at work.
