Roasted Portobello and Vegetable Club Sandwich with Chard and Corn Gratin

Do not look over this roasted portobello club sandwich. It is pretty much perfect. Toasted bread holds a roasted portobello mushroom, sliced avocado, arugula, cucumbers, alfalfa sprouts, gruyere cheese and a light dijon-lemon mayo. Each bite is meaty from the mushroom, fresh and creamy. We paired this sammie with a helping of swiss chard and corn gratin. Fresh Michigan corn and sliced swiss chard is baked in a creamy Gruyere custard seasoned with garlic, thyme and rosemary then topped with parmesan cheese before it is baked. A total splurgy side for this sammie, but so much yum. Order two of this meal, you should totally share it with a friend.
