Looking to try something new this week? Then you have to try our roasted green tomato soup. This is how we utilize the extra tomatoes that are not ripe yet at the end of the harvest. We roast off chopped green tomatoes then add them to a stockpot to be sautéed with diced onion, minced garlic, red pepper flakes and thyme. Once the onions are golden, vegetable stock is added and the soup comes to a simmer. Fresh basil is incorporated last and the soup is pureed until smooth. This is a very fragrant soup that has both a bit of sweetness and bite to it; never the less very delicious. The roasted green tomato soup will brighten up your midweek blues.
