Quinoa with Chickpeas, Cucumber, Bell Pepper, Onion and Lemon-Cabernet Vinaigrette with Cream of Broccoli Soup

Keep is light and delicious this week; with our soup and salad combo meal. In this duo you get a quinoa salad with diced cucumber, red bell pepper, chopped red onion, minced garlic and chickpeas; all dressed in a lemon-Cabernet vinaigrette. Every forkful is jam packed with crisp veggies and creamy chickpeas. The grain salad comes with a helping of our house-made cream of broccoli soup. The soup starts out with onions being sauteed in butter along with the broccoli florets. Once the onions are golden, chicken stock is added and the soup is brought to a simmer. Diced potatoes are added to the soup, to help thicken the soup. Lastly the soup is pureed and finished with a touch of cream and nutmeg. The ideal duo for lunch at work or at your kitchen table.
This meal is ready to warm, assemble and enjoy.
