A back off what? Yes, a baeckeoffe, that translates to “baker’s oven” from German. This is a German inspired dish made up of sliced potatoes, turnips, mushrooms, onions and spinach baked in a gruyere cream sauce. A very winter appropriate dish. The baeckeoffe is seasoned with minced garlic, thyme, tarragon, parsley and white wine. To lighten up this meal we added a side salad of crisp fresh apples, toasted walnuts, pomegranate seeds, and bibb lettuce; all tossed in a cider vinaigrette. This meatless meal is all ready for you to devour.
