Besides the fall, the spring is our favorite time for pasta dishes. Tonight indulge on the spring inspired pasta dish. Sautéed cremini mushrooms and spiced asparagus are tossed in a light butter mascarpone sauce; the pasta is tossed in to incorporate all of the flavors. Lastly the pasta is garnished with toasted walnuts. The pasta comes with a side salad comprised of arugula, roasted beets, tangy goat cheese, walnuts, dried cherries, and avocado. The salad comes with a balsamic vinaigrette. Yes, it is a lot of food, but the leftovers are more than perfect for lunch the next day.
