Take in all of this lovely weather by spending your mealtimes outside. We also know it is hot, and you don’t want something too heavy. These Mediterranean style chicken orzo wraps is just that meal. Roasted chicken breasts are shredded and folded in with cooked orzo, sliced tomato, artichokes, olives, currents and capers; then lightly dressed in a tarragon vinaigrette to make the base of this entrée. The filling is so bright and fresh. We keep it light by making it a lettuce wrap too. The chicken orzo lettuce wrap is paired with a cup of chilled cucumber soup. The chilled soup is made up of pureed cucumber, yogurt, lemon juice, minded garlic and minced shallots; then it is seasoned with fresh dill, tarragon, and parsley. Together these two items make a great meal to savor on a summer’s night.
