Farro with Roasted Squash, Feta and Mint with Pita and Chopped Vegetable Salad

Keep in the spirit of the fall with this roasted squash and farro pita. Butternut squash is sliced and seasoned with a cayenne pepper, cinnamon and sugar spice mixture, then golden roasted. The roasted squash joins an autumn inspired whole grain farro seasoned with fresh apple cider, apple cider vinegar, and minced garlic. Together the squash and farro fill a pita along with feta and arugula. This Mediterranean inspired pita is paired with a chopped vegetable salad. This chopped salad has diced tomato, cucumber, scallion, red bell pepper, red onion, parsley, mint and pomegranate then dressed in a simple citrus vinaigrette. These two dishes will keep you on track for your vegetable intake goals.
