Looking for a light chicken meal this week? Check out our pan sauteed chicken breast topped with salsa verde. Tender boneless skinless chicken breast are pan sauteed and simmered in a salsa verde. To make that salsa we add sliced onions, minced garlic, jalapeno, chopped tomatillos and chicken stock. As this salsa cooks the tomatillos breakdown and help meld all of the flavors together. Serve the salsa verde chicken with the couscous and grilled vegetable salad. The salad has cooked Israeli couscous, grilled zucchini, yellow squash, asparagus, tomatoes, and bell pepper. Chopped parsley and basil season the salad along with a balsamic vinaigrette. This duo is a totally summer friendly meal ready for lunch or dinner.
