This is one of our favorite pasta dishes to make here in the Now Plating kitchen. The classic pasta carbonara is totally creamy, meaty and delicious. The carbonara starts out with diced pancetta being sautéed with minced garlic then chopped roasted chicken is added. As the pasta cooks be ready to pour in the luscious egg custard made up of cream, egg yolks, parmesan, basil and parsley. When the pasta is cooked pour the custard in and the chicken pancetta mixture; fold the pasta and carbonara custard over heat until the sauce begins to set. Once the carbonara takes shape serve hot and garnish with some lemon zest and crushed walnuts. The pasta comes with a spinach salad garnished with sliced pears, cranberries, onion and toasted hazelnuts; all dressed in a balsamic vinaigrette. Yum. Order two for a fantastic date night in, just remember a nice bottle of wine.
