Here is a different pasta dish for you to saver tonight. Braised chicken thighs are shredded and sautéed with chopped figs, tarragon, parmesan and some of the reduced braising sauce. This ragu tops a bed of pasta; then it is all garnished with manchego cheese and marcona almonds. This pasta dish is meaty, nutty, and sweet; each bite makes you think. The fork tender chicken thighs are braised in a chicken stock and madeira sauce, that also contains chopped carrots, onion, celery, tomatoes, and garlic. The pasta comes with a mixed greens and herb salad with bacon. Chopped basil, cilantro, and tarragon are combined with mixed greens, escarole and crispy bacon; all dressed in a red wine vinaigrette.
