Carrot Soup with Ginger and Lemon

Late spring welcomes a bounty of early carrots. This week the kitchen has prepared a carrot soup seasoned with fresh ginger and lemon. The soup starts out with sautéed onions, carrots, garlic, chopped tomatoes, fresh ginger and lemon zest; then vegetable stock is added. Once the carrots are tender, the soup is pureed until smooth and finished with a touch of sour cream. Don’t forget a slice of your favorite bread. Enjoy.
