Beef Braised in Red Wine over Oven-Baked Creamy Polenta

One thing we love about the winter is that it is braising season. Here we braise a chuck roast in red wine and beef stock along with pancetta, onions, celery, carrots, tomatoes, garlic, thyme and rosemary. We braise the beef until it is perfectly fork tender. Besides a nice glass of red wine, we feel that this braised dish goes well with our oven baked creamy polenta. The polenta is cooked with chicken stock, cream and butter. It pairs perfectly with the braised beef. Together the braised beef and the polenta will warm you up on a bitter winter’s night.
