Celebrate the summer with this baked pasta dish featuring the summer’s best vegetables. Sautéed zucchini, onions, corn, and tomatoes are seasoned with garlic, oregano, red pepper flakes, white wine and basil. This vegetable medley is folded in with el dente penne pasta, shredded mozzarella and parmesan cheese; then baked until golden brown. This baked pasta dish is pretty perfect in our opinion, we love all of the veg in it. Just to keep this meal a bit lighter we paired it with a bibb lettuce salad with a classic basil green goddess dressing. The green goddess dressing is made up scallions, basil, lemon juice, garlic, sour cream and mayonnaise. You will totally make your co-workers jealous with these two dishes.
