Arugula and Cabbage with Roasted Salmon, Butternut Squash and Maple-Cider Vinaigrette and Delicata Squash Soup

A dinner salad is on deck for you tonight! Fire up the oven to roast the salmon to your desired doneness and serve it atop this autumn inspired salad. The salmon joins fresh arugula, sliced red cabbage and roasted butternut squash. Top the salad with a sweet and tangy maple cider vinaigrette made up of maple syrup, mustard, cider vinegar and olive oil. What a fantastic entrée salad! We paired it with a serving of our delicata squash soup. The soup is made up of roasted delicata squash, shallot, thyme, cream and vegetable stock; all pureed until smooth and luscious. Now this is what fall is all about squash, maple syrup, and salmon. Yum!
