There is so much zucchini in the kitchen we had to figure out other uses for it. Inspired by our delicious cauliflower parmesan we decided to give it a whirl with zucchini and it came out amazing. Sliced coins of zucchini are roasted with chili pepper flakes and then topped with parmesan cheese. The zucchini parmesan is then shingled and topped with homemade tomato sauce topped with more parmesan cheese and baked. A traditional caprese salad comes with the zucchini parmesan. Fresh tomatoes layered with mozzarella cheese and basil, topped with olive oil and a balsamic vinegar drizzle. Wow what a meatless Italian-inspired meal.
