Here is a meatless Monday change up for you. It has a hint of the South. Our West-African peanut soup is made up of diced onions, sweet potatoes, minced ginger, garlic, and tomatoes; simmered in a vegetable stock. This soup is then seasoned with peanut butter, coriander, cayenne, and roasted peanuts. As the peanut soup slowly cooks, the flavors meld to create a smooth peanut soup. The perfect accompaniment this soup is our roasted sweet potato okra salad. In this salad you will find roasted cubes of sweet potatoes and red skin potatoes, sauteed green okra, capers and spinach; all combined in a cabernet vinaigrette. Really this salad is more filling and acts like a hearty side dish. You can’t resist the sweet potato and okra combination here. It is so southern only fitting to go with this creamy, nutty peanut soup.
