Summer means watermelon is all around us. This week we got the ingenious idea of making a Greek-style salad out of one. We present to you our modern watermelon Greek salad. It has diced watermelon, chopped tomatoes, cucumber, shaved red onion, Kalamata olives, and feta. Plus mint leaves and chopped parsley. The salad is dressed in a simple red wine vinaigrette. What a salad to dig into on a hot summers day. It is sweet, salty, creamy and crunchy. Just a whole bunch of yum.
