Turmeric Chicken and Rice with Moroccan Carrot Salad with Spicy Lemon Dressing

You are one click away from an aromatic Moroccan inspired chicken dinner. First we lightly season the chicken, before it is pan seared in butter and turmeric. Next we add diced onion, garlic, ginger and chopped tomatoes to the chicken in the pot and season it with curry powder, cinnamon and cumin. Once the onions are tender and the mixture is very aromatic we add in chicken stock and allow the chicken to slowly cook. Once fork tender serve the chicken along side steamed rice and top with yogurt, sliced cucumbers, mint and a squeeze of lime. Each bite is meaty and jam packed with flavor. You will be shocked. We also paired the chicken with a carrot salad made up of carrots, chopped parsley, raisins, and feta cheese; then dressed in a zippy harissa and lemon dressing. A summer worthy duo to savor an night of the week.
