It is chili weather! Tonight dig into a piping hot bowl of our sweet potato and black bean chili made with tomatoes and seasoned with toasted cumin, chili powder, cilantro, chipotle peppers, and lime juice. We paired an arugula salad with fluffy quinoa, roasted cubes of eggplant, and sliced apples tossed in a spiced cider vinaigrette. The salad is tangy, meaty and so fresh. It goes perfectly with the chili. Oh and don’t forget to garnish your chili with the extra cheese. Tonight is going to be a meaty meatless one. Yum!
