Keep your meals light and delicious this month; it has been hot. We have two Mexican inspired menu items for you to savor, in fact they can make up two meals. Start off with the Southwester-style shrimp taco salad. The shrimp are lightly seasoned before you char-grill them. Once cooked place the shrimp a top the salad comprised of chopped romaine, cilantro, black beans, corn, chopped tomatoes, and diced avocado. Top with the cumin-garlic-lime dressing that has a hint of sweetness from maple syrup. We love all the flavors and textures in this summer worthy salad. To make this more amazing we paired it with our chicken posole. A chicken stock base hold roasted tomatillos, poblano peppers, hominy and shredded chicken. The posole is then seasoned with garlic, cilantro, jalapeno and oregano. Garnish the soup with sliced radish, sour cream , tortilla strips, avocado and some lime juice. This classic Mexican soup will get you going. What an amazing duo.
