Short ribs! Yes, we are also very exited to see a beef short rib tagine on the menu. This Moroccan-inspired braised dish is made up of beef short ribs that are slowly simmered in a plum juice and red wine sauce. That sauce is seasoned with onions, tomatoes, honey, cumin, allspice, ginger, and cinnamon; then studded with dates and dried pears for sweetness. As the tagine cooks the flavors meld and the beef becomes fork tender. The short ribs are warmly spiced, sweet and meaty. Serve them atop a helping of our honey-roasted butternut squash. The ideal dinner to settle in for the night.
