Your brunch prayers have been answered. This week we have a Spanish inspired combo for you. Sautéed baby spinach and arugula are folded into a beaten egg base along with crunchy bacon and crumbled manchego cheese. The frittata is baked until the eggs are set and the cheese is melted. You can have the frittata warm or cold. We paired a classic tomato gazpacho with the frittata. In that gazpacho you will find the usual suspects of tomatoes, bell pepper, cucumber, onion, minced garlic, a touch of chicken stock and red wine vinegar. Gazpacho is everyone’s favorite cold soup, well it is ours. We also suggest taking this combo to work for lunch.
This meal is ready to warm, assemble and enjoy.
