Start your day off on the right foot with this hearty brunch worthy meal. Sauteed sweet Italian sausage is cooked along side chopped shallots, garlic and sun-dried tomatoes; then folded in with a cream egg custard base. Before the egg and sausage mixture is baked, grated mozzarella cheese is sprinkled on top. This casserole is baked until golden brown and set. We love how cheesey and meaty this egg bake is. To make it even more amazing the casserole comes with a spring inspired salad made up of shaved artichokes, fennel and Parmesan cheese. This salad is lightly dressed in a lemon- garlic-mustard vinaigrette. Each bite of this salad is fresh and tangy. Together these two make for one amazing brunch or lunch option.
