Looking for something different for the week of Thanksgiving? House-made salmon cakes fit that bill perfectly. Roasted salmon is flaked and folded into a saltine cracker, mayonnaise and egg base along with corn and chopped capers. This mixture is seasoned with lemon juice, lemon zest, chives and Dijon mustard. The salmon corn mixture is formed into cakes then pan sautéed until golden brown. Don’t forget to top the cakes with the lemon caper yogurt sauce. To make this dish more luscious we prepared a butternut squash gratin with goat cheese to go along with it. Layers of sliced butternut squash baked with leeks, sage, goat cheese and cream; garnished with hazelnuts; then baked to perfection. The perfect duo to devour at your desk and make your coworkers jealous.
