It is getting a tad bit chilly out there. Warm up tonight with a helping of our roasted vegetable meat loaf. Ground beef, veal and pork are combined with egg, parmesan, panko breadcrumbs and a slew of roasted vegetables. We add a medley of diced zucchini and bell pepper sautéed with garlic and seasoned with fresh thyme and parsley to the ground meat mixture. The meat loaf is roasted with a tomato, balsamic vinegar and red pepper flake glaze. It is then sliced and served with a side of smoked scalloped sweet potatoes. This side dish will bring a smile to your face, sliced sweet potatoes seasoned with chipotle puree then baked in cream and butter. This entrée will warm you up in a hurry.
