Nothing beats a roasted chicken dinner. This week we have a French-inspired chicken entrée for you and your family. Chicken thighs are seasoned with herbs de Provence and lightly dredged in flour are placed in a roasted pan along with whole cloves of garlic, sliced lemon, chopped shallots and fresh thyme. Vermouth is added to the pan then the chicken is roasted until golden brown and aromatic. We absolutely love seasoning items with herbs de Provence, which is a herb mixture of thyme, rosemary, lavender flowers, savoy, basil, tarragon, and oregano. The spice mixture instantly takes you to the fields of Luberon. The roast chicken is served alongside a simple thyme-garlic roasted cherry tomato gratin topped with breadcrumbs.
