A meatless meal to get excited about. This power duo of a quinoa-vegetable stew and kale salad are just what you needed for the week ahead. Our quinoa-vegetable stew is made up of diced carrots, celery, zucchini, onions, yellow squash, red bell pepper, sweet potatoes, northern beans, kale, tomatoes and quinoa. The stew is seasoned with garlic, thyme, lemon juice and red pepper flakes. Serve the stew when the quinoa is fully cooked and the sweet potatoes are tender. We love all the flavors in this stew, all the veggies. Wait, there are more veggies. It is paired with our kale and date salad. Shredded kale is folded in with sweet chopped dated and toasted almonds; then dressed in a lemon-honey-shallot vinaigrette with a touch of heat from red pepper flakes. Don’t forget to top the salad with the shaved parmesan. An amazing meatless twosome to savor.
