Your taco Tuesday prayers have been answered. It is time to dig into these amazing pork tacos. The pork is seasoned with a paprika, cumin, garlic, oregano and cinnamon spice mixture and then char-grilled. The pork is then sliced and served on a corn tortilla with an avocado salsa made up of diced avocado, tomatoes, red onion, and a hint of minced chipotle. Yum! To add more pizzazz to the meal we paired a Southwestern-style grain salad with it. It is made up of tender quinoa mixed with corn, black beans, diced poblano, and onion; all dressed in a cumin-chili powder vinaigrette; then topped with queso fresco.
