The chestnuts are roasted and then added to our house-made chicken stock along with porcinis, carrots, celery, parsnips, and shallots. Once the vegetables are tender the soup is pureed until smooth and then finished with dry Sherry. You will not forget this porcini and chestnut soup, you will crave it.
