Squash season is here! We celebrate all types of squash in our kitchen. One of our favorite ways to utilize butternut squash is by roasting it and adding it to a pasta. Here we dice and roast the butternut squash and is combined in a light cinnamon and mint pan sauce. The pasta pan sauce is made up of sautéed shallots, seasoned with cinnamon and red pepper flakes and finished with parmesan, lemon juice and chopped mint. Toss the pasta with the roasted butternut squash and pan sauce and your have one fantastic fall meal. The pasta comes with a side arugula salad that has olives, orange segments and ricotta salata; all dressed in a citrus-cabernet vinaigrette. Together these two items make for one extra-ordinary meatless meal.
