This “risotto” orzo is everything you have been dreaming about this summer. It is creamy, rich, and delicious. The orzo is slowly cooked with sautéed shallots until tender, it is then seasoned with sherry vinegar, fontina cheese and parmesan cheese. Lastly the chopped swiss chard is folded in. The orzo is paired with tender crisp sugar snap peas topped with a sautéed soffrito garnished with chopped mint. The soffrito has diced bell pepper, onion, tomatoes and garlic.
