Looking for something a little bit different for dinner tonight? Check out our North-African bean stew. This stew is made up of barley, chunks of butternut squash, beans, leeks, sliced fennel, lentils, and turnips; all simmered in a light tomato base seasoned with cinnamon, garlic, paprika, cumin, coriander, nutmeg and allspice. So this stew is not short on aromatics. We paired a sweet potato salad with sliced celery, grapes, pecans, pomegranate seeds, and raisins combined with a yogurt sherry vinaigrette to go along with the veggie stew. There is more than enough food here, you may want to use the salad as a snack later in the day. Yum!
