Missing the fall? Sometimes we do too here in the Now Plating kitchen. This week we have a light but hearty mushroom soup for you. The soup starts off with sautéed onions, sliced shiitake, oyster mushrooms, and cremini; then deglazed with sherry. Next chicken stock is added and the mushrooms are left to simmer. The soup is seasoned with thyme and a touch of cream. If you close your eyes when you take a bite, it will make you believe that football season is here.
